Summer Fizz

Matt, the Manager from The Nuthatch in Stockton shows us how to make a beautiful ‘Summer Fizz’ Cocktail, ideal for any BBQ when you fancy something different to a bottle of lager, or a glass of your favourite Sauv Blanc….


  • Strawberry Syrup (see recipe below)
  • 1 punnet Strawberries
  • 50ml Sloe Gin (we recommend Monkey 47 Sloe – simply beautiful)
  • 1/8 Cucumber (cut into small 1cm cubes)
  • 1 mug Caster Sugar
  • Soda Water
  • 1 Lemon

Making Strawberry Syrup

Chop some great British Strawberries, enough to fill a mug.

Add the strawberries to a saucepan, along with an equal amount of water and caster sugar.

Simmer over a medium heat until the sugar dissolves and the strawberries soften.

Continue to simmer on a low heat until the liquid reduces by half.

Leave to cool and then strain to remove strawberry mulch and seeds.

You will only need 25ml of the strawberry syrup for the cocktail, use the rest to pimp up some Prosecco, or even just with lemonade. 

Making a Summer Fizz

In a cocktail shaker muddle, or mash the cucumber cubes.

Add 25ml of freshly squeezed lemon juice.

Add 25ml of the Strawberry Syrup and 50ml of your chosen Sloe Gin.

Add ice and shake vigorously for around 25 seconds, strain into a small rocks glass over fresh ice and top with a little soda water.

Your Perfect Garnish 

Get creative with your garnish, use a vegetable peeler to slice through a cucumber and fold to make a cucumber ribbon or keep it simple with a Strawberry.
